Festive Rice Salad

2 cups cooked chilled brown rice
½ cup chopped king crab or imitation crab
½ cup ham
½ cup finely chopped celery
2 hard cooked eggs
1 tbsp chopped chives
¼ cup chopped parsley
1 tbsp olive oil
1 tbsp wine vinegar
½ cup mayonnaise
salt and pepper to taste

Combine all ingredients by tossing lightly except oil viegar and mayonnaise. Sprinkle oil and vinegar over mixture. Add mayonnaise and season to tase. Refrigerate for several hours for enhanced flavor.
